Quick & Easy Strawberry Banana Waffles

Okay, so I don’t normally post my recipes on Saturday evenings but I just made these (yes, for dinner) and they were A-MAZING so I wanted to share them with all of you. Breakfast can get pretty boring, but I have created a wonderful summery treat for you. You have to try these Strawberry Banana Waffles!

To be honest, I wanted to make Banana Nut Waffles (recipe to come on another day) but I didn’t have the nuts so I had to modify my idea a bit. Turns out, I’ve created something that we will be having more often.
This recipe is quick to put together and to cook, which makes it easy to throw together on one of those mornings where you’re running around like a crazy woman (don’t worry mama, we all have them). Make these waffles for your littles and you’ll definitely be rocking your morning and making them a delicious home-cooked meal.
You can substitute the strawberries with any fruit you’d like, I think this would be great with blueberries also! Or just throw in the nuts & enjoy banana nut waffles.
This would also make some delicious pancakes I bet! Try it out and let me know how it goes. 😀

Strawberry Banana Waffles
These waffles are so absolutely delicious and are not very sweet. They will be a breakfast hit in your house, just like they are in mine. Plus, you can make a whole bunch ahead and just freeze them for quick pre-made breakfast options.

Easy recipe for delicious strawberry banana waffles. Melt in your mouth delicious, not too sweet & not too tart.
Instructions
  1. Mix dry ingredients in medium mixing bowl.
  2. Mix in mashed bananas.
  3. Mix in milk, oil, and vanilla until fully blended.
  4. Stir in sliced stawberries.
  5. Fill waffle iron (all irons are different so there is no specific measurement) and close.
  6. Cook 5-8 minutes (depending on your waffle iron) until golden brown and the iron stops steaming/sizzling.
  7. Top with your favorite topics (whipped cream, syrup, butter, etc) and enjoy!
Recipe Notes

Make-Ahead & Freeze

To use this recipe as a make-ahead breakfast option just follow the recipe instructions. Let the waffles cool and then wrap them in foil or plastic wrap and freeze. They can be frozen for about a month.

To reheat and enjoy just pop them in the toaster as you would store-bought frozen waffles. Or preheat your oven to 350° and bake for about 10 minutes!

These are great for those busy mornings when you want something better than a donut but much tastier than toast.
